Easy Pot Roast Dinner with Vegetables

Look for a chuck roast with good marbling. This will add great flavor, and make sure the end result is tender and juicy.

Prepare all the vegetables.

Season the roast with salt and pepper. Sear it in a hot skillet, and then transfer it to a plate and set aside for now.

To the same skillet, add the broth, tomato paste, garlic, rosemary, and thyme. Bring up to a simmer, whisking to combine, and then remove from the heat.

Add the prepared vegetables, seared roast, and broth mixture to a slow cooker in the order that the recipe specifies. Cook on LOW heat for 8 to 10 hours (don't open it while it cooks!).

This makes a full meal of pot roast, potatoes, carrot, celery, and gravy in the crockpot!
