Step 1

Sear the mat, season it, add the aromatics and liquids, and cook it (covered)  for 1 1/2 to 2 hours.

Add the vegetables and cook (covered) until the meat and veggies are tender, about 1 hour 15 minutes more.

Remove the meat and vegetables. With the pot containing the cooking liquid over medium heat, whisk in the cornstarch or flour slurry to make the gravy.
