Make the garlic and herb butter.
Pat the chicken dry. Stuff the cavity with the halved lemon, halved head of garlic, 2 sprigs fresh rosemary, and 2 sprigs fresh thyme. Rub the garlic butter on the chicken.
Assemble the vegetables and chicken in a Dutch oven.
Roast the chicken at 425F covered for 1 hour, 15 minutes and uncovered until crispy outside and fully cooked inside, about 15 to 30 minutes more.
