Add the oil and butter to a pot over medium heat. Add the onion, celery, and carrot, and cook 5 minutes. Add the garlic and thyme & cook 1 minute, then add the flour & cook 30 seconds.
Stir in the chicken stock, milk, cream, S&P, and Italian seasoning. Bring to a simmer, stirring frequently. Add the gnocchi and cook 2 minutes, stirring frequently.
Stir in the chicken and spinach, and cook until heated through, about 2 minutes more, stirring constantly.
Serve!
