Peel, core, and chop the apples small.
Add all ingredients except the brandy and citrus zest to a pot over medium heat. Once boiling, cover and simmer 30 minutes, stirring occasionally. Then cook uncovered until thickened, stirring frequently.
Remove from the heat and stir in the orange zest, lemon zest, and brandy.
