Prep and grill the meat. Let the steak sit at room temperature for 20 minutes. Pat dry, drizzle with olive oil, and season with S&P. Preheat the grill to 450-500F. Put the steak on the grill, close the grill, and cook for about 6 to 8 minutes.
Cook to your desired level. Flip the steak over, cover the grill again, and grill until it's cooked to your desired level of doneness. As a guideline, it takes a 1-inch steak about 9 to 12 minutes at 450F to reach medium-rare doneness.
