Fry the sage! This is easy to do in just a couple minutes, and it really elevates the dish.
Sauté the onion and garlic, toast the rice, and then deglaze the pan with wine.
Stir in the pumpkin and spices, and then slowly start stirring in the warm stock.
Continue stirring frequently and adding stock a little at a time until the stock is all absorbed.
Stir the half and half and then the Parmesan cheese.
Transfer to a bowl and top with the fried sage. Enjoy!
