Strawberry filling. Take about 10 minutes to make the strawberry filling. Or if you're pressed for time, use 3 cups of store-bought strawberry pie filling.
Make the dough. Use a hand-held electric mixer to cream together the butter, brown sugar, and vanilla in a large bowl. Add the flour, oats, cornstarch, and salt, and beat just until combined.
The crust. Line an 8 by 8-inch pan with parchment paper. Press half the dough evenly into the bottom.
Strawberry layer. Spread the cooled strawberry filling evenly on top.
Add the crumble topping and bake. Crumble the remaining dough on top of the strawberry filling. Bake until the top is golden, about 40 minutes at 350F.
