Where do you get your recipe inspiration?
The other day I was at the grocery store. Nothing fancy (there still isn’t even Whole Foods or a Trader Joe’s in my area, if you can believe that!), just my regular grocery store (picking up the bread that I mentioned in this post, actually). When I saw them looking up at me.
What were they?, you ask. Muffins. But these muffins looked to die for. They were big and golden, and stuffed with so much cheddar they looked like the muffin fairies that made them (like the Keebler cookie elves, you know? ;) ) started with nothing but cheese and added in just the teensiest bit of batter. And I knew I needed to try my hand at making muffins like that.
I did a couple things differently. They used orange cheddar and I used white (a very sharp New York State white), and I added the faintest bit of rosemary for flavor and aroma (thyme would be a lovely substitute). The muffins were incredible, but despite the fact that I used a full eight ounces of cheese, I feel like they didn’t have even close to the amount of cheddar as those beautiful muffins at the grocery store. I think I would have to use three or four times as much cheese as I did to get the same results…and oh wow, is that a lot of cheese! For now, I’m very happy with these.
Of course, good muffins, like anything else, start with quality ingredients. Eggs are pretty important, since their freshness can really affect the quality of a dish. I recently received a coupon for Land O Lakes® eggs, which I used in this recipe…and wow, are they good!
And in order to really enjoy the fresh flavor of these eggs I made breakfast: a sunny-side up egg served with a white cheddar muffin and homemade applesauce.

Yields 10 muffins
1 ½ cups all-purpose flour
1 ¾ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
1 tablespoon sugar
2 large eggs
¾ cup milk
¼ cup canola oil
1 tablespoon minced fresh rosemary
8 oz sharp white cheddar, shredded
Preheat oven to 400F; butter and flour a muffin tray (or line it with paper liners).
Whisk together the flour, baking powder, baking soda, salt, and sugar in a medium bowl. Whisk together the eggs, milk, and oil in a large bowl. Gradually stir the dry ingredients into the wet, being careful not to over-mix, then fold in the rosemary and cheddar.
Fill each muffin well about ⅔ to ¾ full of batter; bake until light golden on the sides and top, and a toothpick inserted inside comes out clean, about 14 to 16 minutes. Cool the muffins in the tray for 10 minutes, then remove from the tray and transfer to a wire rack to finish cooling.

I LOVE eggs! I like them in any way, shape or form but my absolute favorite is over medium. I want the white to be solid but the yoke to still be runny. This is hard to get just perfect but when they are they are the best!

I love to use eggs in all baked goods-- whipping them into sugar for cookies or dropping them into the mixer for buttery yeast doughs-- but making lemon curd has to be the "funnest" way to use them. Curd is delicious and it stays LOOKING like eggs, as the yolk gives it that nice deep yellow color. Plus, if your recipe doesn't use the whites, you can make some meringue kisses afterwards.

Not sure about Land o' Lakes, but the other day at the grocery store I counted three types of eggs claiming to be "cage-free." Not laid by cage free chickens, but cage-free eggs. And I have to wonder why anyone would cage up their eggs? They are a strange not-quite-round shape, so I can see leaving them in a bowl so they won't roll away, but otherwise why imprison them?
Egg prices are up a skosh, maybe because of market pressures or maybe just because winter is approaching and chickens lay fewer eggs. But still, even at $2 a dozen, they are a steal. Three and a half bucks for organic and well-fed chickens, and you're still talking around fifty cents a serving. You just can't beat that. I'm a numbers guy, and I realize when it comes to math, most folks like to keep it as simple as possible. And if there's a $1.50 dozen sitting next to a $3 dozen, it's easy to justify grabbing the cheaper twelve-pack. But if you compare the more expensive dozen to a serving of chicken or beef, it looks like a steal.
We make frittatas about twice a month. Makes for a great dinner with left-overs for lunch the next day. But I love them in something unexpected, like a poached egg over a salad or softly fried egg on a quesadilla.

Scrambled eggs are my boyfriend's absolutely favorite breakfast food. I usually soften up some onions in butter first. Then I mix the eggs together with some cheese, salt, pepper, and heavy whipping cream before adding it to the onions. They are amazing!

I always keep around eggs for baking of course, but I recently had great success making my first frittata - so easy and looks impressive and beautiful! I've been using omega-3 eggs for the health benefits - worth the extra cost!

My favourite way to use eggs is in a good old-fashioned breakfast. I love scrambled eggs with toast and use a ton of eggs while baking too!

I love eggs! They are my go to dinner when I either don't know what else to eat or I don't have anything else to eat. They are so easy and delicious and there are so many different ways to use them. Picking a favorite is hard, but I do love soft scrambled eggs on toast with a slice of swiss cheese, so tasty! Omelets are good too!

My favourite way to use eggs is as dinner. I eat eggs for dinner a lot, especially when I'm on my own. My favourite thing is fluffy scrambled eggs with a slice of cheese on toasted bagel. It makes me feel so happy :D... seriously!
