My Cinnamon-Vanilla Chia Seed Pudding recipe was inspired by one of my favorite diner desserts: cinnamon rice pudding! It has a texture similar to tapioca pudding, and just 2g net carbs per serving, making it a delicious keto dessert.

  • Stir together all ingredients in a small bowl.
  • Refrigerate until it reaches your desired thickness, stirring occasionally. (I usually chill mine about 2 hours, or overnight.)
