Ingredients

  • 1/2 tablespoon extra-virgin olive oil
  • 2 medium cloves garlic crushed
  • 1 cup baby spinach leaves
  • 4 ounces cream cheese cut into cubes
  • 4 ounces shredded mozzarella
  • 4 ounces shredded white cheddar I used Cabot Legacy Collection White Oak Cheddar Cheese
  • 1 tablespoon fresh minced dill or 1 teaspoon dried dill
  • 1 ounce crumbled feta
  • Fresh parsley leaves for the top

Instructions

  • Preheat the oven to 425F.
  • Heat the oil in a small skillet over medium heat. Once hot, add the garlic and spinach, and cook until the spinach is wilted, about 1 to 2 minutes, stirring constantly. Spread this into the bottom of a 1-quart baking dish or gratin dish.
  • Add the cream cheese to the dish, and then the mozzarella, cheddar, dill, and feta.
  • Bake until the cheese is golden and bubbling, about 15 minutes.
  • Sprinkle the fresh parsley on top.
  • Serve warm.

Notes

  • Whip up this dip and keep it in the fridge and treat it as a keto fat bomb. To do so, heat one portion (or half a portion, if that’s what fits into your macros) at a time.
  • Don't skimp on the cheese for this recipe! The different kinds of cheese all add something unique to this dish. And it's supposed to be ultra-cheesy.
  • To Make Low Carb Tortilla Chips: Preheat oven to 375F; line a large baking tray with foil and spray with avocado oil. Cut your favorite low carb tortillas into chip-shaped wedges and arrange them on the prepared tray. Spray the tops with avocado oil and sprinkle with salt. Bake until golden, about 15 minutes, flipping once halfway through.
