Brigadeiro is a decadent bite-sized Brazilian chocolate confection that’s similar to a chocolate truffle, but with a fudgier texture. This version is keto, and every bit as rich and delicious!
Add all ingredients to a medium saucepan over medium heat. Bring to a boil, and then turn the heat down slightly so it doesn’t boil over, and cook until the mixture is thick like hot fudge. Once the mixture comes to a boil, it needs to be whisked constantly, and it should take about 5 to 7 minutes from that point (depending on the temperature and humidity).
Pour the thick chocolate mixture into a bowl. Place a piece of plastic wrap directly on top of the chocolate. Let it cool to room temperature, and then refrigerate until chilled, about 1 ½ hours.
Once chilled, use a 1-tablespoon-scoop to measure out the chocolate. Roll each into a ball, and then roll it in your coating of choice.
