Low Carb Spiralized Yellow Squash Noodles with Tomatoes, Pesto, and Parmesan is where salad meets pasta! You can feel like you’re indulging, but really just chowing down veggies.
Ingredients
  • 1 medium-sized yellow summer squash, spiralized
  • 4 to 6 tablespoons Pistachio Cilantro Pesto
  • ½ cup cherry tomatoes, halved
  • 2 tablespoons shelled unsalted pistachios, chopped
  • 2 tablespoons fresh-grated Parmesan cheese
  • A small handful of fresh cilantro leaves
Instructions
  1. Toss together the spiralized yellow summer squash with the pesto.
  2. Top with all other ingredients.
  3. Serve.
Notes
Paleo and Vegan Version: Omit the cheese.
