Place the circles on a parchment paper-lined baking tray, cover, and proof.

Deep fry the doughnuts.

Immediately after frying, toss the donuts in sugar to coat.

Use a sharp paring knife to cut a slit into the side of each donut. Use a jam-filled piping bag to fill each donut in the slit you just cut.
