Pelmeni  (Meat Filled Dumplings)

If you’re having trouble getting the dough to seal when you fold it over onto itself, lightly wet your fingers with water and run that along the outside of the dough.

Step 1

Make the dough and filling, and then shape the pelmeni. Roll out the dough and stamp it into circles or squares. Put 1 teaspoon of filling in the center of each piece of dough. Fold the dough over onto itself, and then pinch the outer edges together.

Freeze the dumplings until ready to serve. To cook, add the frozen pelmeni (about 10 per serving) to a pot of boiling water. Once the dumplings float, let them boil for 3 minutes, and then drain well.
