Zurek (Sour Rye Soup)

Don't be intimidated to make sourdough rye starter! It's easy, and I walk you through the process.

Pro tip

Step 1

Cook the bacon until the fat is rendered and it's starting to crisp, then add the turkey and onion, and cook until the turkey is browned. Add the garlic and cook 1 minute.

Add the stock, vegetables, and seasonings, and simmer.

Stir in the zakwas (fermented rye starter), simmer for 5 minutes, and then add the finishing touches.
