If you grew up in Buffalo, these sparkling mocktails featuring the sweet/tart flavor of homemade sugar free blackberry lime syrup will remind you of the iconic loganberry drink - but less sickly-sweet!
Add the blackberries, water, sweetener, and salt to a medium saucepan. Bring to a boil, and then reduce the heat, cover, and simmer 10 minutes.Turn off the heat and let the berries steep in the liquid (covered) for 30 minutes to an hour.Use a fine mesh sieve to strain out the berries, reserving the liquid.Stir the lime juice and vanilla into the blackberry syrup.
To Make the Mocktail Spritzers:
Fill 4 glasses 2/3 full of crushed ice. Into each glass, add the following: 3 tablespoons homemade blackberry syrup, 8 ounces sparkling water, 1 mint sprig, and 2 slices of lime. Enjoy!
Notes
Net Carbs: 4 grams per serving (1 serving = 3 tablespoons of syrup).
Blackberry Syrup Recipe Yield and Serving Size: This recipe makes about 3/4 cup of syrup. Each serving is 3 tablespoons of syrup, for a total of 4 servings.
Sweetener: In the original recipe, I used 1 1/2 tablespoons granulated erythritol + 3 drops stevia glycerite as the sweetener. With how far keto sweeteners have come, my preference is now a granulated keto monk fruit/allulose sweetener. If you prefer regular granulated white sugar, you can use 3 tablespoons of that instead.
To Make Wine Spritzers Instead of Mocktail Spritzers: Use half sparkling water and half wine.
