This rich and decadent chocolate rocky road fudge recipe has crunchy walnuts and fluffy marshmallows, and whips up in 1 bowl in just 5 minutes! It’s a lovely festive treat to have on hand for the holidays, and it’s great for a dessert buffet or as party favors all year.
Line an 8 by 8-inch or 9 by 9-inch square pan with 2 pieces of parchment paper so it hangs over all 4 sides (so you can easily remove the fudge later).
Add the chocolate chips, sweetened condensed milk, and butter to a large microwave-safe bowl and microwave in 30-second intervals to melt the chocolate. Stir together to combine. (Or you can use a double boiler instead of the microwave.)
Stir in the vanilla and salt. Fold in the walnuts and marshmallows.
Transfer the fudge to the prepared pan and spread it out evenly. Refrigerate until fully chilled, about 4 hours, before slicing and serving.
Notes
Storage: Store homemade fudge layered between pieces of wax paper in an airtight container in the fridge for up to 3 weeks.
Nuts: Instead of walnuts, you can use pecans, almonds, peanuts, or any type of nuts you like.
Marshmallows: If you don’t have miniature marshmallows on hand, you can cut regular-sized marshmallows into 4 pieces. Or use colored marshmallows!
Topping: This is completely optional, but you can decorate the top if you like. For example, red and green sprinkles would be great for Christmas, and rainbow sprinkles would be perfect for a birthday.
