Chocolate-Covered Sponge Candy

December 30, 2020 by Faith 32 Comments

Homemade Chocolate-Covered Sponge Candy is easier to make than you might think. If you love this candy as much as this Buffalo girl, this recipe is for you! Here the crunch and complex sweetness of caramelized sugar candy is coated with chocolate for a treat everyone loves.

Chocolate-Covered Sponge Candy 1

We don’t talk candy much around here, which is probably for the best.

Of course with the exception of things like Crispy Toasted Puffed Quinoa Dark Chocolate Candy Bars, Healthy Chocolate Peanut Butter Cups, and Paleo Candy Apple Wedges.…

Vanilla Bean and Maple Toasted Pecan Marshmallows {Paleo}

Vanilla Bean and Maple Toasted Pecan Marshmallows on Metal Tray on Wooden Table with Coffee

Vanilla Bean and Maple Toasted Pecan Marshmallows {Paleo} are a fun and festive treat to have on hand during the holidays or any time a sweet tooth strikes. I’m about to tell you something that I hope doesn’t change your opinion of me: I’ve never been a huge fan of marshmallows (gasp!). I wouldn’t by choice top my hot cocoa with marshmallow instead of whipped cream. I’ve always hated those yellow peeps things at Easter. And when s’mores time rolls around I’m always happiest roasting a marshmallow or two for someone else and just snagging a little piece of chocolate for myself....

Protein Chocolate Fudge {Gluten-Free; Vegan}

March 25, 2016 by Faith 9 Comments

Protein Chocolate Fudge on Vintage Plate {Gluten-Free; Vegan}

Protein Chocolate Fudge that won’t foil your healthy eating…this rich gluten-free treat is sweetened with dates and pure maple syrup with complex flavor notes of vanilla and espresso. We all get those days. Maybe that one coworker was relentless today, or maybe traffic was especially fun. Maybe your hubs is giving your marriage vows a run for their money (hey, it happens in real life). Or perhaps it’s just that time of the month. Whatever the reason, sometimes we just need a little chocolate in our lives, especially when it’s healthy like this Protein Chocolate Fudge. Am I right, ladies?...

Maple Walnut Cheesecake Truffles {Dairy-Free; Gluten-Free; Naturally-Sweetened}

With that evil temptation of a holiday coming at us this Friday, I had to take preemptive measures. Otherwise, I knew I’d be doomed....

Deluxe Cake Batter Fudge

April 14, 2014 by Faith 11 Comments

I don’t know about you, but I’m a little hard-pressed to find a dessert that’s suitable for Easter outside of carrot cake, lemon bars, or orange chiffon cake. And of course all the cutesy little bunny and egg-topped cupcakes and cookies. There’s nothing wrong with any of those things (in fact, I die over a good slice of carrot cake!), but I don’t know…I like to mix things up a little. If you’re the same way, this fudge will definitely keep things interesting....

Fudgy Walnut Spread (And so much more!)

October 26, 2012 by Faith 24 Comments

This is the Fudgy Walnut Spread thinned out with a little milk. It’s very ganache-like, and in addition to being a delicious spread, it is also wonderful as a frosting for cupcakes! Every once in a while I get a really good idea that just seems to fall into my head (usually via a dream…and yes, that really happens, lol), or fall into my lap (usually via a kitchen mishap). This recipe was sort-of the latter. It started with a big bag of beautiful walnuts that I received from a lovely blog reader, Letty. (Thank you, Letty…the walnuts are incredible!)...

Salted Caramels

October 18, 2010 by Faith 57 Comments

Salted Caramels are easier to make than you might think! Their lovely sweet/salty flavor is addictive and they make a beautiful, festive homemade gift or party treat. This recipe is something I’ve wanted to make for quite a while: the fabulous Ina Garten’s Fleur de Sel Caramels. All of Ina’s recipes that I’ve made in the past have been delicious and this one was no different. I’m sharing the recipe here because I made a few changes to Ina’s original recipe, in both the ingredients and method....

Twix Bar Cookies {aka Millionaire’s Shortbread}

November 23, 2009 by Faith 25 Comments

Twix is my husband’s favorite candy bar, and I immediately knew I wanted to make him these bar cookies when I first saw the recipe for Millionaire’s Shortbread on Joy of Baking. Millionaire’s Shortbread is nothing other than shortbread topped with a layer of caramel and then a layer of chocolate – just like Twix! It’s a pretty simple and straightforward recipe to make; the only thing that’s even a little difficult/time consuming is the caramel filling....
