Lazy Pierogi Casserole with Sauerkraut and Apple (aka Lazy Perogies)

March 23, 2020 by Faith 44 Comments

Lazy Pierogi Casserole with Sauerkraut and Apple (aka Lazy Perogies) has all the flavor of a delicious perogy, but with a quick, easy, and healthier spin!

Dish of Lazy Pierogi Casserole with Sauerkraut and Apple (aka Lazy Perogies) on Table with White Tablecloth

Once the crisp chill of autumn settles in, my mom eases back into her routine of making big traditional comfort meals for our Sunday suppers, instead of casual dinners cooked on the grill.

A few years back she started making a dish that she calls Lazy Perogies that she learned from an old friend of the family. (Growing up in Buffalo, New York, this is actually a fairly popular recipe!)…

Quick Lasagna Casserole (aka Lazy Lasagna Recipe)

February 28, 2020 by Faith 10 Comments

This Quick Lasagna Casserole (aka Lazy Lasagna Recipe) has layers of cooked pasta with flavorful tomato beef sauce, mozzarella, ricotta, and Parmesan cheeses. It comes together quick and easy in just 40 minutes and is every bit as flavorful as regular lasagna! Not too long ago, I made a huge batch of bison, bean, and vegetable soup. It was, if I do say so myself, pretty fabulous. Naturally, I completely expected my hubby not to like it....

Low Carb Noodle Free Lasagna Recipe in Dish on Yellow Wooden Table

This Low Carb Noodle Free Lasagna Recipe features a homemade meat sauce and flavorful savory ricotta mixture, and is topped with a combination of mozzarella and Parmesan cheeses for the ultimate cheesy comfort food. First let’s talk about the elephant in the room. My Low Carb Noodle Free Lasagna Recipe is by no means a classic or authentic lasagna! However, it is jam-packed with flavor, and every bit as delicious as a regular lasagna. I’ve had both keto and non-keto people ask for seconds, as well as ask for the recipe....

Low Carb Moussaka in Blue and White Flowered Dish on Wooden Table

This gluten free Low Carb Moussaka (Greek Beef Eggplant Casserole) recipe has a couple non-traditional elements that make it truly special. Greece has been on my bucket list of travel destinations for forever now. When I think of Greece, I think of ancient ruins. The brilliant blue of the Aegean Sea, contrasted by the pristine white houses. And the food, of course the food....

Low-Carb Cheesy Leftover Turkey (or Chicken) Jalapeno Popper Casserole {Gluten-Free}

November 21, 2016 by Faith 14 Comments

This gluten-free Low-Carb Cheesy Leftover Turkey (or Chicken) Jalapeno Popper Casserole can be made ahead using leftover turkey or chicken; make a double batch (in two casserole dishes) so you have dinner set for another night too! I know by this point you’re probably sick of being bombarded with every manner of Thanksgiving recipe, but I come bearing a little inspiration on what to do with leftover turkey after the big day. I realize every family has a few staple recipes using leftover turkey that absolutely have to get made every year; maybe it’s your grandma’s Turkey Barley Vegetable Soup, Turkey Tetrazzini, Turkey Pot Pie, or […]...

October 23, 2015 by Faith 18 Comments

This Loaded Cheesy Potato Casserole features cheddar cheese, turkey bacon, and green onions…it’s pure comfort food! For dinner, pair it with any protein you like or just a big green salad. Thanks to the kind folks at the Idaho Potato Commission, I recently had the opportunity to head out to Idaho for a little hands-on potato action....

Cheesy Tuna Noodle Casserole Recipe

April 13, 2015 by Faith 9 Comments

This Cheesy Tuna Noodle Casserole Recipe is easy to make from scratch for the perfect weeknight meal! For a slight twist on classic tuna noodle casserole, it has Old Bay Seasoning and a buttered toast topping. It’s just a fact of life: anyone growing up in the late ‘80s and/or early ‘90s most likely had to endure some variation of tuna casserole. Frequently, in my case....

Cheesy Chicken Vegetable Cobbler {Lactose-Free}

September 26, 2014 by Faith 9 Comments

When autumn rolls around with its shorter days and chilly evenings, I always start to feel a little nostalgic. What that really means is that I start to miss the cold-weather comfort foods that I haven’t had in what feels like forever because the weather has been too warm to really enjoy them....

Macaroni and Cheese with Cauliflower, Tuna, and Egyptian Roumy Cheese

March 14, 2014 by Faith 12 Comments

This dish is basically a grown-up version of Tuna Helper. (Despite my mom being the anti-processed food extremist that she was, which I now thank her for, even I tried Tuna Helper as a kid.) Don’t judge. :)...

Butternut Squash-Topped Cottage Pie

November 29, 2013 by Faith 12 Comments

I never knew the difference between Shepherd’s Pie and Cottage Pie until recently; I found out, Shepherd’s Pie uses lamb and Cottage Pie uses beef. To my knowledge, both are classic British fare, and decidedly wonderful comfort food. The kind of food that makes you want to pull up a chair to a rustic wooden table in front of a crackling fire in a cozy pub and stay a good long while as you thoroughly enjoy your meal. It’s also the kind of meal you can easily whip up the day after Thanksgiving using all kinds of fabulous leftovers, and then enjoy at the end of […]...
