BEST Copycat California Pizza Kitchen BBQ Chicken Pizza Recipe

September 22, 2022 by Faith 32 Comments

This copycat California Pizza Kitchen BBQ Chicken Pizza recipe pairs sweet and tangy BBQ sauce with chicken, gooey mozzarella, smoky Gouda, zippy red onion, and fresh cilantro. It’s a unique and absolutely delicious combination of flavors! And bonus, using store-bought dough from your pizzeria or grocery store means it’s quick and easy to whip up for pizza night at home.

When I was in law school, I liked to meal prep when I had time. My rotation consisted of things I could dump and forget in the slow cooker (like beef stew), prepare large batches of at one time (such as meatballs), or cook with minimal hands-on effort (like roast chicken).

But I also liked to keep a few store-bought favorites stashed in my freezer, including a couple frozen California Pizza Kitchen BBQ Chicken Pizza. I fell in love with that unique pizza flavor combo!

No Knead Bread Recipe

No Knead Bread Loaf on Cutting Board with a Buttered Slice of Bread

With a slightly tangy flavor, crisp crust, and chewy interior, this No Knead Bread Recipe reminds me of a loaf of sourdough. I know it’s been a couple years now since no-knead bread first took the food world by storm. I am no doubt behind the times for only now trying it! Especially because it’s probably considered passé to some. Even so, there can be no denying that it’s a pretty fantastic discovery....

Warm-Spiced Pumpkin Yeast Bread

November 2, 2015 by Faith 10 Comments

This Warm-Spiced Pumpkin Yeast Bread is slightly sweet, subtly scented of warm spices, and rich in color from pumpkin. And it only requires 30 minutes of hand-on prep time to make! I find that the smell of baking bread is just one of those things that puts people at ease. Maybe it evokes childhood memories or maybe it reminds them just how delicious fresh bread tastes. In any case, I wish I could bottle the smell of fresh baked bread....

Rye Bread

September 27, 2013 by Faith 11 Comments

Some people take long walks. Others play really gorgeous instruments, like the violin. And there are those who soak in bubble baths, regularly get massages, or have weekly appointments with a therapist. Me? I get in the kitchen....

Savory Baked Yeast Doughnuts {With Potato, Manchego, & Thyme}

November 26, 2010 by Faith 44 Comments

I promise these aren’t bagels!  :) I hope everyone had a safe and happy holiday!  Every year after Thanksgiving I start thinking about interesting new ways to use leftovers since it’s the one holiday meal that seems to generate a few weeks’ worth of extra food.  There are many delicious ways to remake turkey (turkey croquettes, tortilla soup, musakhan, and quesadillas, to name a few), but sometimes reinventing Thanksgiving side dishes can be more difficult....

Eggplant Pizza

August 17, 2010 by Faith 48 Comments

What to do with one small lonely eggplant?  That was the question in my mind before I found this recipe.  I don’t know of many recipes that feed four people, only call for one small eggplant, and still allow the eggplant to be the star of the dish.  Of course I had to make something else for Mike (who doesn’t like eggplant or cheese – aaahhh!), but it worked out well since we have tons of leftover biryani.  ;) Eggplant Pizza (Adopted from Epicurious) (Yield:  4 servings) Pizza: Dough (see below) 1 small eggplant (about 1/2 pound), thinly sliced into about 1/4-inch rounds 3 small-medium […]...

Chewy Country Oat Bread

June 10, 2010 by Faith 34 Comments

I don’t really think of myself as a baker.  But there are some times in life when I just crave homemade bread.  The yeasty smell that fills the house as it bakes.  Its hard outer crust and pillow-y interior.  Still warm and slathered with butter, it’s heaven on earth, and paired with fruit it makes an especially fabulous breakfast in bed. Like I said, I don’t bake that often (especially not bread!).  But there’s a secret I want to share with you about making bread – it’s not hard, it’s just involved.  What I mean, is it (usually) takes quite a bit of time and […]...

Easy Cheddar-Studded Bread & Peach-Strawberry Fizz Drinks

May 18, 2010 by Faith 34 Comments

If you decide to make just one of my recipes, I highly recommend you make this bread.  It requires only minimal ingredients and effort, but still tastes like a million bucks.  You can make your own pizza dough if you have the time, but I made this recipe as part of my Mother’s Day Menu on a day when I was seriously pressed for time…and it came out perfectly.  My hubby who was born and raised with Arabic bread (and normally isn’t tempted by baguettes, country breads, or fresh, yeasty loaves of any kind) said that this was the best bread he ever had.  I […]...
