How does your family do Thanksgiving dinner?

Pot luck-style with everyone bringing a dish to pass? Or maybe the person hosting makes everything and someone else hosts the next holiday?

In my family, dinner is always at my mom’s house, and she and I make everything together (except for the turkey, which my mom brines and my dad roasts).

We like to have an assortment of sides to please everyone because everyone has a different favorite. And it seems like there is always at least one person who is on a new diet or who found out that they are intolerant to something, and we also like to have a dish that fits their way of eating.

Savory Pumpkin + Cheese Stuffed Shells

Back home, Friday nights used to be my girls’-night-in sleepover night with my niece Autumn Rose. She’s all of ten now (wow, where did the time go?!), but you’d think she was at least fourteen from the way she looks (tallest in her class!) and the way she acts.

I’ve always been proud of her for being such a healthy eater – her mother drilled it into her from the very beginning and it has done wonders for her in every way. Which is why when I made this for dinner one Friday night late last winter I was completely surprised at her response: I don’t eat stuffed shells…they’re not my thing and I just don’t like them. Ok, first, lol. See what I mean? Ten going on fourteen. And second, this was coming from the girl who voluntarily orders pan-seared fish when eating out (in Disney, nonetheless!), drinks kombucha with me, and laughs in the face of savory green smoothies before gobbling them up (truth be told, I don’t even know many adults who can handle savory green smoothies…they really are an acquired taste!). It’s been a strange summer for a million different reasons.

I won’t bore you with the details (yet), but let’s start with the weather.

First off, it’s felt like autumn for the past week or so now (especially in the unseasonably chilly evenings), and there were even brisk days in July that felt more like late rather than early summer. Not that I’m complaining; I’m a cold-weather girl all the way, but it is curious to say the least.

And instead of leaving me craving a fresh summer salad for supper, this is the sort of weather that leaves me wanting something warming…a dish like Vegetable Beef Pie with Cheesy Potato Topping fits the bill perfectly. (more…)

Lately he’s been eating a banana a day for breakfast, but until about a week ago he refused to touch a banana that had a single brown spot on it. Pizza Mac & Cheese

It had to be done. Had to.

Last week I was talking to my friend Alyssa (the blogger behind the fabulous blog Everyday Maven); Ramadan was about to end, and she and I were discussing food. (Because really, during Ramadan sometimes food is the only thing you can think of.) So, anyway, I told her Ramadan was ending in a couple days and she said I should enjoy my favorite foods for a week straight. (See how awesome she is? Truly a girl after my own heart.) She said if she were me, she’d be making mac and cheese.

I had to laugh; she completely read my mind. Not 10 minutes earlier I had texted Mike, asking him to stop at Wegmans to pick up a box of pasta on his way home. I asked him for elbow noodles by name and the stars must have all been aligned because he actually knew what they were (unthinkable, really).

See what I mean? I had to make mac and cheese. (more…)
