Old Bay Roasted Red Pepper Quinoa Seafood Cakes with Bread and Butter Pickle Tartar Sauce

April 4, 2018 by Faith 2 Comments

Louis Kemp provided me with product for the purpose of this post, as well as compensation for my time. As always, all opinions expressed in this post are my own.

Old Bay Roasted Red Pepper Quinoa Seafood Cakes with Bread and Butter Pickle Tartar Sauce is the perfect pairing; flavorful, oven-crisped patties topped with a creamy sauce that comes together in 30 minutes!

Old Bay Roasted Red Pepper Quinoa Seafood Cakes on Serving Platter with Vintage Fork

If I had to choose one thing I love to eat and frequently order at restaurants but don’t make often enough at home, it would have to be seafood, followed closely by steak. I don’t know why; it’s not like these things are challenging to make, but I think they’re out of my comfort zone (probably because I don’t give myself enough practice making them!).…

Sweet and Savory Quinoa Pilaf with Cranberries, Roasted Butternut Squash, and Toasted Almonds Top View on Wooden Crate Vertical Orientation

Zoup! provided me with product for the purpose of this post, as well as compensation for my time. As always, all opinions expressed in this post are my own. Sweet and Savory Quinoa Pilaf with Cranberries, Roasted Butternut, and Toasted Almonds is packed with flavor and nutrition, and is the perfect addition to any holiday spread or fall gathering. We all have our classic holiday side dish standbys. Green bean casserole, candied yams, and buttery mashed potatoes, to name just a few of my family’s favorites. I’ll occasionally do a rice dish (typically a pilaf) of some kind, and just to mix things up, I […]...

Pizza-Flavored Quinoa Fried “Rice”

March 15, 2017 by Faith 6 Comments

I’ve partnered with SmartMade™ to create this post! Enjoy! Pizza-Flavored Quinoa Fried “Rice” is crowd-pleasing real-food meal that combines a couple of classic take-out favorites and can be whipped up in less than 10 minutes with a little prep ahead! Pizza and Chinese are bigtime contenders for take-out favorites in my house. Neither are particularly healthy, but they’re equally delicious and will get the job done of feeding a hungry crowd on a busy night when cooking dinner seems like a long shot....

Crispy Toasted Puffed Quinoa Dark Chocolate Candy Bars

February 24, 2017 by Faith 5 Comments

Crispy Toasted Puffed Quinoa Dark Chocolate Candy Bars are a real-food take on a favorite candy bar! Growing up in the ‘80’s/90’s, things like Boston Baked Beans (the candy coated peanuts), candy cigarettes, and Warheads were our junk foods of choice. My sister also had a thing for Nestlé Crunch Bars, but I was more of a Reese’s Peanut Butter Cup kind-of girl. If I had been able to try this real-food version of a Crunch bar, things might have been different though; IMO, this blows the real thing out of the water....

20-Minute Chicken Fajita Quinoa Dinner Skillet

July 6, 2015 by Faith 14 Comments

This quick-cooking 20-Minute Chicken Fajita Quinoa Dinner Skillet is cooked on the stovetop, and is a great recipe to have up your sleeve for those busy summer nights when you don’t want to heat up the oven or fire up the grill! It’s a great way to use leftover chicken too. So, Mike still won’t eat quinoa. I wish we could be one of those happy dinner households where they make one meal and all sit down to enjoy the same thing together like The Brady Bunch or something. That has just never been the case with us....

Tomato-Basil Turkey Burgers with Garlicky Zucchini and Quinoa Recipe {Plus a Q&A with Denise Austin and a Giveaway of Her 10-Week Health and Fitness Plan}

February 20, 2015 by Faith 40 Comments

For nearly everyone I know, February is their least favorite month (even my sis, and it’s her birthday month!). By the time February rolls around, the excitement of starting a new year has worn off and so has the novelty of snow…and the need to constantly bundle up and chug soup to stay warm. Green grass, leafy trees, and color in general are still a long way off and everything just seems kind-of blah. I’ve got something that’s full of excitement and energy to warm you up on a cold February day…how about a chat with Denise Austin, some fabulous fitness motivation, and her recipe […]...

Two-Grain Vegetable Salad with Chickpeas and Feta

June 27, 2014 by Faith 6 Comments

“You want to make potato salad again?”, Mike asked me one day. We were headed to a potluck pool party later that day and he was apparently sick of potato salad. (I can’t blame him though; I brought our favorite potato salad to three different parties in the past month! Truth be told, I’m a little sick of potato salad too.)...

Tri-Color Quinoa, White Bean, and Bell Pepper Salad {And a $50 Bob’s Red Mill Gift Card Giveaway}

April 30, 2014 by Faith 117 Comments

When I don’t feel like cooking and I ask Mike to cook for us, we inevitably end up with one of two things for dinner: eggs or foul m’demmas (an Egyptian dish of mashed fava beans with garlic, tomato, parsley, cumin, lemon, and olive oil). Now, I love eggs in all their incarnations, and Egyptian food is always a favorite. But sometimes I wish the hubby would whip up something different, like, oh I don’t know, say a roast chicken with gravy or beef bourguignon. (Wishful thinking, right?)...

Quinoa Corn Patties with Cool and Creamy Onion Dip

August 17, 2011 by Faith 51 Comments

Corn is amazing this time of year…it’s almost as sweet as candy! It’s definitely one of my favorite sides for any grilled meal, and usually (since I’m a little corn-crazy), I end up grilling or steaming a few too many ears of it. That’s always a good thing though!...

Quinoa Corncakes

February 2, 2011 by Faith 57 Comments

Does anyone else remember as a kid requesting to go to IHOP specifically for their corncakes with pecan maple syrup?  Hot off the griddle, dripping with maple syrup, with a hint of nutty crunch from the pecans…as a 10 year old, food really didn’t get any better than that, except for maybe pop rocks and warheads.  I haven’t had pop rocks or warheads in years, but corncakes with maple syrup and pecans are still a favorite of mine....
