Apricot Benedict with Peanut Sauce

I love Eggs Benedict.

It’s one of my favorites to order out for brunch, but I’ve never tried my hand at it at home, mostly because – if I’m being totally honest – hollandaise sauce intimidates me a little. (more…)

Peanut Butter, Banana, and Bacon “Elvis” Burgers

Say you tell someone you just had an amazing burger…

The burger itself was perfectly seasoned and it was finished off with great mix of sweet/salty/savory toppings.

They ask what the toppings were, and you casually reply peanut butter, banana, and bacon. (more…)

Chicken Satay Meatball Curry

I love chicken satay; I mean I really adore it.

I never hit up a Thai restaurant without ordering it, and I like coming up with different variations of it (like soup and sandwiches) in my own kitchen. (more…)

Loaded Kit Kat Peanut Butter Brownies

While I was back home last holiday season and Mike was here in Kuwait, he took the opportunity to load up on a few choice junk food items that usually don’t make their way into our cart when he and I shop together.

I came back to a kitchen fully stocked with chips, soda, and candy bars by the case. (Oh my God, it was a nightmare. I can’t imagine what he was thinking.) (more…)

Peanut Butter Monte Cristo Club

I remember the first time I saw a Monte Cristo on a menu. I was feeling completely grown-up and oh-so-worldly eating at a fancy café downtown with a friend. Where we had driven our 16-year-old selves.

Anyway, the name of the dish caught my eye and as I read through the description I was curious…and captivated.

Always a fan of the savory/salty/sweet combo, I ordered it. (more…)

When autumn rolls around, there are little things more comforting than a flavorful, hearty bowl of soup. This one is thick and rich, but also veggie-laden with olive oil-roasted cauliflower, onion, and garlic as the base. (more…)

I hate to be the bearer of bad news, but did you realize that summer is more than half over?

That happened fast.

Did you have a summer bucket list of things you wanted to get done?

I’ve been slowly crossing little things off of mine. (more…)

Healthy Peanut Butter, Banana, and Honey Milkshake

Healthy Peanut Butter, Banana, and Honey Milkshake

One of my favorite family traditions is every winter we snowbird down to Florida for a couple weeks of vacation. We are Disney fanatics, the whole lot of us (well, maybe aside from Mike, who claims that he goes for my sake…but when we’re there he seems to be enjoying the food and merriment for his own sake as well, lol), so the bulk of our time gets spent there. (Last year I posted about the afternoon tea we had at The Grand Floridian.)

We have a few favorite places where we always eat in each Disney theme park; at Hollywood Studios one of our favorites is 50’s Prime Time Café. They serve classic American comfort food (think pot roast, meatloaf, fried chicken, and chicken pot pie) in a 50’s atmosphere. To further add to the ambiance, the waitress has you call her “Mom” and scolds you if you put your elbows on the table or if you don’t finish your veggies.

We didn’t end up going to Florida this year, so our Disney time was out; I was recently craving a really thick, old-fashioned milkshake like what they serve there. There are two flavors in particular that I’m really crazy about: chocolate peanut butter cup and peanut butter and jelly. Peanut butter is definitely the common denominator. (more…)
