When autumn rolls around, there are little things more comforting than a flavorful, hearty bowl of soup. This one is thick and rich, but also veggie-laden with olive oil-roasted cauliflower, onion, and garlic as the base.

My inspiration for this soup was Potage Parmentier, the French potato and leek soup that Julia Child made so famous. Although the flavors are different, the texture is similar, and also the fact that this soup is incredibly satisfying with its creamy consistency, but also a bit of texture from small pieces of vegetables.

A super quick Spicy Peanut Butter Crème sauce gets stirred into the soup for a fun flavor boost, and also a little more gets drizzled on top to make it pretty. It’s a meal I find completely irresistible.

  3. I will definitely have to go and check this out – intriguing. I do spicy cauliflower fritters with an almond satay sauce so I know nuts and caulis go together, but never thought of them cosied up in a soup

  7. LOVE me some cauliflower! It’s been ages since I’ve made cauliflower soup and just the other day, I was thinking about making a roasted version. This looks delicious and I could easily spoonfeed myself that creamy peanut sauce!
