I wanted to hurry up and post this recipe before summer is completely flittered away.  I realize that most of you probably get to enjoy longer summers than I do (summer in upstate New York is a short and sweet affair), but I still thought I better hurry up and post this already, especially since I’ve been dreaming about strawberry shortcake oats since the start of strawberry season.  As much as I love strawberries and shortcake separately, I’m not a huge fan of strawberry shortcake, mainly because I don’t like soggy cake.  With oats as the shortcake replacement, the soggy cake problem is completely eliminated.  And once again, who doesn’t love breakfast for dessert or vice versa (such as caramel apple oats or almond joy oats)?  Even with all the other amazing oatmeal combinations, I think this might actually be my favorite bowl of oats.

Strawberry Shortcake Oats

 

(Yield:  1 serving)

 

¼ c steel cut oats

½ frozen banana, thawed

¾ c water

Dash salt

3 TB plain yogurt

~ ¾ c sliced strawberries

Sprinkle of sugar (½-1 tsp)

 

Sprinkle sugar on the berries and refrigerate for at least one hour; the berries will macerate and their natural juices will be drawn out.  In a small pan, combine the oats, frozen banana, water, and salt; heat on medium-low heat for ~12 minutes or until it reaches your desired consistency.  Stir frequently and whisk occasionally to incorporate the banana.  Serve topped with the strawberries (and their juices…the juices are the best part!) and yogurt.
