31 Irish Dishes via An Edible Mosaic

In the collage above, clockwise starting at the top right: Colcannon with Cabbage or Kale from The Hungry Goddess; Easy Corned Beef Hash from Very Culinary; Colcannon Cakes with Smoked Salmon from Always Order Dessert; Cheesy Irish Soda Scones from Simple Bites; Potato Leek Soup with Shamrock Pesto Croutons from Apron Strings; and Healthy Shamrock Shake {aka Mint Flavored Smoothie} from An Edible Mosaic.

You know the old saying: Everyone is Irish on St. Paddy’s Day!

If that’s the case, I think we might as well eat like it.

I love Irish food. It’s uncomplicated and hearty, unassuming and comforting. They are the kind of home-cooked meals that mom would make (even my mom…and she is not Irish!). In fact, I can’t remember sitting down to an Irish meal I didn’t enjoy.

For some St. Patrick’s Day inspiration, here are 31 classic Irish dishes from around the web, and just for fun I included a few green desserts. Because St. Patrick’s Day should always involve a little green bling, right?

Now go and make something Irish!
