You know the old saying: Everyone is Irish on St. Paddy’s Day!

If that’s the case, I think we might as well eat like it.

I love Irish food. It’s uncomplicated and hearty, unassuming and comforting. They are the kind of home-cooked meals that mom would make (even my mom…and she is not Irish!). In fact, I can’t remember sitting down to an Irish meal I didn’t enjoy.
