Strawberry Overnight Oats

April 30, 2021 by Faith 8 Comments

Strawberry Overnight Oats taste like strawberry shortcake, but are nutritious with fresh strawberries and oats! They’re easy to make, perfect for meal prep, and great for grabbing on-the-go for breakfast or dessert.

People who know me know are always shocked to hear that I went through a hoarding phase as a kid. It’s true though!

Book Review: One Simple Change by Winnie Abramson {And a Few Healthy Breakfast Ideas}

July 25, 2014 by Faith 3 Comments

I know a lot of people who think perfectionism is a good thing. (Perfectionists always seem to be on top of their game…they never have to use the excuse that the dog ate their homework and never wonder whether they’ll be late for an appointment or a deadline because they’re always early.) But being a perfectionist can also mean being way too hard on yourself, to the point where a small mistake becomes a big deal. And sometimes, if life doesn’t go exactly as planned, it’s a source of undue stress. For example, extra traffic en route to an appointment that makes you 20 minutes […]...

What I Ate Wednesday #4

December 19, 2012 by Faith 20 Comments

Breakfast, Part 1 (pre-workout): Cottage Cheese  I can’t believe it’s been about a year since I last did a What I Ate Wednesday post! (Here are my first three: 1, 2, and 3.) I’d like to say I’ll try to do more of these posts, but in reality, my daily eats generally aren’t always interesting (I’m still stuck on my cottage cheese in the morning! :) ). There is a random day that is pretty fun though, and this day was one of them…enjoy!...

Homemade Lamb or Beef Stock

September 21, 2012 by Faith 20 Comments

I have to give it to you straight on this one. Making stock isn’t the prettiest job. There are bones and/or carcasses to deal with.  And skimming scum (ugh, that word is especially not pretty…but that’s really what it’s called!) off the top of a simmering pot of liquid that is best described as looking like murky pond water.  And the fun continues into the next day with skimming the fat off the top of the cold gelatinous stock. It’s not pleasant, not in the slightest....

Healthy Breakfasts On-the-Go

July 12, 2012 by Faith 18 Comments

I wasn’t always a breakfast eater.  In high school, college, and even law school I had myself convinced that I didn’t have time to eat in the morning.  What I didn’t realize was that those mid-afternoon energy crashes could have been avoided had I started my day with a healthy meal…since then I’ve realized that I don’t have time not to eat a healthy breakfast. And even breakfast on-the-go can be healthy....

Healthy Packed Lunches

April 13, 2012 by Faith 16 Comments

Healthy packed lunches are easy to whip up and don’t have to be boring! There’s no avoiding packed lunches.  Most of us make them on almost a daily basis, either for ourselves, our spouses, or our kids.  I’m a big advocate of eating at home or packing a lunch rather than eating out during the week (at least most of the time), because not only does it save money, but it also makes it easier to eat healthier....

What I Ate Wednesday #3

March 21, 2012 by Faith 19 Comments

Breakfast, Part 1 (pre-workout):  Cottage Cheese   This is my third time participating in Jenn’s What I Ate Wednesday (here is my first and here is my second)…I know I don’t participate as much as some people, but I hope I’ve given someone out there some meal inspiration!  It’s actually more of a challenge than it seems to photograph everything you eat in a day (it’s really time-consuming and makes you think more than you normally would about what you’re ingesting), and this has caused me to gain even more respect for bloggers who post every meal they eat, every day of the week (Kath immediately comes […]...
