With Mother’s Day less than a week away, you might already have your morning plans all set. Maybe you made brunch reservations at a great place that mom has been wanting to try, or maybe you make the same special breakfast for her every year.

But on the off chance that you’re looking for a new idea, I think this waffle would fit the bill perfectly.

I know it is birthday cake-flavored, but I think that flavor is perfect for any special occasion, and what could be more special than Mother’s Day? This recipe is grain-free, gluten-free, dairy-free, and naturally sweetened, but tastes like the real deal and they cook up to be crispy outside and soft inside. This recipe makes just one waffle if all you need is one serving for mom, but it’s a really easy recipe to adjust to feed however many people you’re cooking for.

Where does the natural birthday cake flavoring come from? It’s magic. Or more specifically, it’s the magic that happens when you combine vanilla extract, almond extract, a touch of coconut oil or clarified butter, and a smidgen of mahlab.

If you’re not familiar with it, mahlab is a spice that comes from the seeds of the St Lucie cherry. To me, it tastes like a cross between almonds and cherries, and it adds just the right touch of something special here.

This paleo Healthy Birthday Cake Flavored Waffle for One uses all-natural, real-food ingredients to get that fun, whimsical birthday cake flavor; it's perfect for any special occasion morning!
Ingredients
Waffle:
  • 6 tablespoons (42 g) almond flour
  • 1 tablespoon coconut sugar
  • ⅛ teaspoon salt
  • ⅛ teaspoon baking soda
  • 1/16 teaspoon (1 pinch) ground mahlab
  • ½ tablespoon coconut oil (or clarified butter/ghee), melted
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon pure almond extract
  • 1 large egg
Topping Ideas:
  • Fresh berries or sliced fruit
  • Chia seeds, hemp hearts, or ground flaxseeds
  • Chopped walnuts, pecans, or almonds
  • Chocolate chips
  • Shredded coconut
  • Pure maple syrup, honey, or all-fruit jam
  • Grass-fed butter
Instructions
  1. Whisk together all ingredients until combined.
  2. Cook the batter in a waffle maker until done.
  3. Serve warm, with any toppings you like.

    My favorite waffle topping creation has bananas foster, candied pecans and pure maple syrup. My kids like theirs a bit sweeter with chocolate chips, crushed graham crackers and toasted marshmallows…S’mores style! It’s fun to have family and friends over and make up a waffle bar, everybody can customize their own meal!

    My favorite food for breakfast is oatmeal, its such a great way to start the day. I use old fashioned oats most of the time and steel cut on occasion. My favorite creations include apple pie which has diced apples, cinnamon, nutmeg, cloves, candied pecans, flaxseeds, chia seeds, raisins and maple syrup. I also like bananas with cardamom, flaxseeds, chia seeds, dried cranberries, walnuts and honey. A twist on carrot cake is good too, I use matchstick carrots, coconut, walnuts, cinnamon, nutmeg, raisins, candied ginger and honey.

    I love this waffle! I have never heard of that spice but it sounds lovely. My favorite waffles are just fluffy plain (I know I sound boring) but then topped with tons of fresh fruit and maple syrup. OR if I want dessert I like a scoop of ice cream on my waffles :)

    I’d do terrible things for a fancy waffle maker like that… I haven’t had waffles in a year or two, now that I think of it! Waffles come close to the top of my favorite deluxe breakfast dishes, but I think that French toast just barely squeaks past to the #1 spot. That said, I’d totally throw that same French toast into the waffle maker given half a chance for the ultimate morning indulgence.

    This sounds amazing! I’m all about birthday cake flavors and can’t wait to try the paleo version.

    For a special breakfast, I really need something from both the sweet and savory sides, so I’d probably say a pancake or waffle with lots of fruit on top and a side of bacon, maybe with a crispy egg too to round things out :).
