Healthy Special Occasion Birthday Cake Flavored Waffle for One {Paleo} 1

With Mother’s Day less than a week away, you might already have your morning plans all set. Maybe you made brunch reservations at a great place that mom has been wanting to try, or maybe you make the same special breakfast for her every year.

But on the off chance that you’re looking for a new idea, I think this waffle would fit the bill perfectly.

I know it is birthday cake-flavored, but I think that flavor is perfect for any special occasion, and what could be more special than Mother’s Day? This recipe is grain-free, gluten-free, dairy-free, and naturally sweetened, but tastes like the real deal and they cook up to be crispy outside and soft inside. This recipe makes just one waffle if all you need is one serving for mom, but it’s a really easy recipe to adjust to feed however many people you’re cooking for.

Where does the natural birthday cake flavoring come from? It’s magic. Or more specifically, it’s the magic that happens when you combine vanilla extract, almond extract, a touch of coconut oil or clarified butter, and a smidgen of mahlab.

If you’re not familiar with it, mahlab is a spice that comes from the seeds of the St Lucie cherry. To me, it tastes like a cross between almonds and cherries, and it adds just the right touch of something special here.

Next time you need a special breakfast give this one a try!

My favorite brunch treat? Strawberry Cheesecake French Toast.

  2. I am a fan of quiche for brunch!

  3. My favorite waffle topping creation has bananas foster, candied pecans and pure maple syrup. My kids like theirs a bit sweeter with chocolate chips, crushed graham crackers and toasted marshmallows…S’mores style! It’s fun to have family and friends over and make up a waffle bar, everybody can customize their own meal!

  4. My favorite food for breakfast is oatmeal, its such a great way to start the day. I use old fashioned oats most of the time and steel cut on occasion. My favorite creations include apple pie which has diced apples, cinnamon, nutmeg, cloves, candied pecans, flaxseeds, chia seeds, raisins and maple syrup. I also like bananas with cardamom, flaxseeds, chia seeds, dried cranberries, walnuts and honey. A twist on carrot cake is good too, I use matchstick carrots, coconut, walnuts, cinnamon, nutmeg, raisins, candied ginger and honey.

  5. I actually have this waffle maker and just wanted to say that touch of mahlab did not go unnoticed! Thanks, might have to double this for our Sunday brunch. :)

  6. Cannot beat classic biscuits and gravy!

  7. Nutella and whipped cream are my favorite waffle toppings!

  8. Pancakes are my favorite!

  9. I love this waffle! I have never heard of that spice but it sounds lovely. My favorite waffles are just fluffy plain (I know I sound boring) but then topped with tons of fresh fruit and maple syrup. OR if I want dessert I like a scoop of ice cream on my waffles :)

  10. Love this and all things breakfast! My favorite is pancakes, they are a treat!

  11. This waffle looks delicious! I’m definitely passing this recipe on to my husband and kids as a hint for this weekend!

  12. I love waffles with blueberries.

  13. Maneesha Pradhan says:

I’m not a breakfast person but my girls love pancakes and waffles.

  14. I love how protein filled these waffles are. If it was up to me, I would eat breakfast baked goods every morning, and with almond flour maybe that wouldn’t be the worst idea ever lol. Which tells you right there my favorite is waffles. Then pancakes. Then French toast lol. You get the idea…

  15. My favorite special breakfast food would be crepes! Yum!

  16. My favorite topping? Strawberries!

  17. My favorite waffle topping is strawberry rhubarb compote, so good!

  18. I love making crepes because they’re really easy once you get the hang of it, and so versatile!

  19. Bianca @ Sweet Dreaming says:

my favorite topping for waffles is peanut butter and maple syrup, plus something crunchy like apples or granola!

  20. Bianca @ Sweet Dreaming says:

my favorite food for a special breakfast is chocolate chip pancakes!

  21. Brittany Koelmel says:

My favorite toppings for waffles would hands down be chocolate chips, blueberries, strawberries, and whipped cream. Yum!!

  22. Brittany Koelmel says:

My favorite breakfast food would either be waffles (no surprise there!) or corned beef hash. I’m waiting on dinner to finish cooking right now and thinking of waffles makes me SO HUNGRY!

  23. Joselle Merritt says:

My favorite topping is either lingonberry jam or apricot preserves

  24. Joselle Merritt says:

My favorite breakfast item (when we have time) is crepes. My 13 year old makes them and has for about 5 years. We serv them with lemon juice and powdered sugar. Too bad she won’t eat them :-)

  25. Jessie May says:

Shared on Twitter (@Philantopic) and tagged my best brunch bestie!

  26. Jessie May says:

    Your waffle looks amazing!

Waffle toppings are an art form, indeed. I love a dark chocolate drizzle with blueberries for a powerhouse kick of antioxidants and flavor.

  27. Jessie May says:

My favorite brunch treat (on the weekends!) are smoked salmon eggs benedict with tomatoes and an herb hollandaise. Absolutely decadent, but I feel decadent and deserving on the weekends after a long week (and healthier options prior!). Oh no…. just realizing it’s only Monday now! #dreamingofbrunch

  28. waffles or pancakes, definitely–they’re a rare treat!

  29. Oh yes, and my favorite waffle toppings? It depends on the waffles, but in general, I will always reach for good old fashioned grade B maple syrup first.

  30. I’d do terrible things for a fancy waffle maker like that… I haven’t had waffles in a year or two, now that I think of it! Waffles come close to the top of my favorite deluxe breakfast dishes, but I think that French toast just barely squeaks past to the #1 spot. That said, I’d totally throw that same French toast into the waffle maker given half a chance for the ultimate morning indulgence.

  31. My favorite waffle toppings are either fresh berries or banana and nut butter!

  32. This looks great! I go in phases with favorite brunch dishes and I’m on a hash kick right now – roasted potatoes and veg topped with a runny egg, YUM :)

  33. This sounds amazing! I’m all about birthday cake flavors and can’t wait to try the paleo version.

For a special breakfast, I really need something from both the sweet and savory sides, so I’d probably say a pancake or waffle with lots of fruit on top and a side of bacon, maybe with a crispy egg too to round things out :).
