Healthy Candy Apple Wedges {Paleo}

Healthy Candy Apple Wedges {Paleo}

How many of you will admit to sneaking some of your kid’s Halloween candy when no one is looking?

I don’t have kids (yet!), but yeah, I’d be guilty as charged.

It’s the stuff we won’t buy for ourselves, but if it’s just hanging around, it’s fair game. If you didn’t buy it for yourself, the calories don’t count, right? ;)

I like to have healthier treats that will still satisfy a sweet tooth at the ready.

Healthy Candy Apple Wedges {Paleo} 2

Back home, one of the holiday markets I go to has a stand selling gorgeous gourmet chocolate and caramel-coated apples. Some are coated in nuts, crushed candy, cookie pieces, etc. Throwing all caution to the wind and with complete disregard for the old saying an apple a day keeps a doctor away, they have figured out how to take something healthy and make it into something that should be saved for special occasions only. But oh my goodness, those apples are hard to resist. Of course I have to serve them cut into wedges because more than a wedge or two of those apples will send you right into a sugar coma.

Although those insanely decadent apples were the inspiration for my Healthy Candy Apple Wedges, these little beauties can be enjoyed anytime. Apple + super dark, antioxidant-rich chocolate + toasted walnuts = perfect sweet treat. For anytime.

Now quick, go make these because you know once tomorrow night rolls around your willpower will be waning!

P.S. These would be super fun to make with the kiddos too! You could melt a couple different kinds of chocolate so they have choices, and also let them use other healthy toppings (like other nuts, seeds, coconut flakes, chia seeds, mini chocolate chips, etc.). Get them excited about healthy treats…and maybe they won’t completely gorge on Halloween candy! :)

Healthy Candy Apple Wedges {Paleo}
Prep time:  15 mins
Cook time:  2 mins
Total time:  17 mins
Yield: 2 servings

Ingredients
  • ¼ cup (60 ml) lemon juice or apple cider vinegar
  • 2 medium apples, washed (I used Granny Smith because I like their tart flavor)
  • 3 oz (85 g) good-quality dark chocolate, chopped (see Note)
  • 2 tablespoons toasted walnuts, chopped
Instructions
  1. Add the lemon juice or vinegar to a medium bowl and fill the bowl ⅔ full with cold water; set aside for now.
  2. Core and quarter the apples; cut each quarter into 2 wedges so you end up with 8 wedges from each apple. Transfer the apple wedges to the lemon juice/water mixture to soak while you melt the chocolate and prepare the walnuts.
  3. Meanwhile, melt the chocolate in a double boiler or microwave until smooth. Finely chop the walnuts and place them in a small dish.
  4. Line a baking tray with wax paper and have it ready to place the apple wedges on.
  5. Drain the apple wedges, and pat them dry with paper towels. Working with 1 apple wedge at a time, dip it in the chocolate (or drizzle the chocolate on top), and then sprinkle on some walnut. Place the wedge onto the prepared tray. Continue this way until all the apple wedges are coated.
  6. Transfer the tray to the fridge so the chocolate can harden; serve.
  7. I like to serve these within a couple hours of making them to help keep the apples from oxidizing.
Notes
Chocolate: To keep this paleo and vegan, use dairy-free, stevia-sweetened dark chocolate.

    These apples are such a good idea! I bet they’re especially great if you live in an apple-growing area and do things like accidentally end up buying five pounds of different exciting apples at once… :)

    I LOVE this Faith! I do the same thing with apples! It’s such a nice treat and I don’t feel guilty at all eating it! I love that you sprinkle on some walnuts. I may work my way into the kitchen right now and make some!

    These looks soooo good Faith! I don’t think I’ve ever actually had a caramel apple (shocking right?!) but tart green apples drizzled with dark chocolate sound totally just as good. :) Love the idea of this as a healthy treat for those times when you have to have some chocolate!

      Jolene, I don’t calculate calories or other nutritional information for my food, but there are several free online tools that will help you with this. Calorie Count is a pretty useful tool, and can be found here. Hope this helps!
