Pineapple-Almond Slaw Salad

The day I made this Pineapple-Almond Slaw Salad I was having my mom and sister over for lunch (built-in recipe testers are the best, aren’t they?).  This salad was so delicious (and addictive) with its crunchy texture and sweet/tart/nutty flavor that we all basically inhaled it – and were too full for the rest of lunch!

The flavor of pineapple is highlighted in this recipe and used in two different ways:  it’s pureed into a bright-flavored dressing, and some pieces are left whole for bursts of tangy sweet-tart flavor.  For the full recipe (with step-by-step photo instructions), please check out my recipe on Foodie.

I also entered this recipe into the Dole California Cook-Off Facebook Contest.  If you’d like to participate, you can enter an original starter or appetizer recipe that uses at least one cup of any Dole product.  The prize includes a trip to Los Angeles to compete at The Grove in the 2012 Dole California Cook-Off judged by Celebrity Chef Ben Ford; additionally, the winning recipe contestant receives $10,000 in cash and two runners up each receive cash prizes of $1,000!

    Made this when my son and his girlfriend came to cook dinner for us! She’s an amazing cook but think I “stole her thunder” with this salad!! :) So very good and refreshing! We love the asian/ramen noodle salad a lot, but this took over the #1 slot in the “slaw” category for this family! Thanks for sharing .. we will think of you often!

    Hahaha I totally agree with you that built in recipe testers are the best :) Mr Bao is definitely my tester and now that i’m working lol i’ve built up a network of colleagues and asking them to test my recipes for me woo hoo :)

    I have never used pineapple in slaw before, but this looks amazing and zingy (the way I like it). Especially like the dual use of this most refreshing of fruits. Yum! Good luck with the competition. I think it’s a winner :D

    I’m typically not a huge fan of slaws because of all that mayo! But this sweet fresh and tangy version is a whole other kinda thing. A whole other delicious kinda thing. Love it!
