This canned chicken salad recipe is easy to make in less than 10 minutes! It’s creamy like tuna salad and seasoned with simple pantry staple spices. This version is higher in protein and a bit healthier because we replace most of the mayo with Greek yogurt.

creamy shredded chicken salad stuffed in pita

I remember my mom having her friends over for ladies’ luncheons when I was a kid.

She’d make mint-flavored iced tea or lemonade to drink and fruit salad for dessert. She’d usually serve one of two things for lunch: a pretty arranged salad on a bed of greens along with a couple of sides (one of which was always cottage cheese with chives, which was her favorite), or tuna salad sandwiches.

My sister and I always felt so grown up at those lunches. And to this day, tuna salad sandwiches are a favorite of mine!

This chicken salad is based on classic tuna salad, but with chicken instead of tuna and some of the mayo replaced with Greek yogurt. It’s incredibly simple, but always a favorite.

What Makes This Canned Chicken Salad Recipe Healthy?

This recipe is healthier than most because of a few easy swaps:

  1. We replace 2/3 of the mayo with Greek yogurt to lower the fat and bump up the protein.
  2. We add vegetables (onion and celery) to increase the fiber and fullness factor a bit.
  3. Look for no-salt-added chunk chicken breast in water. This helps reduce the sodium because canned foods can be quite salty.

And this salad is also low carb, keto friendly, and gluten free!

Ingredients

Ingredients Explained

In this section I explain the ingredients and give substitution ideas where applicable. For the full recipe (including the ingredient amounts), see the recipe card below.

canned chicken salad ingredients
  • Canned chunk chicken breast in water – Using canned chicken makes this salad a budget-friendly meal. I frequently find cans of chicken on sale (usually BOGO) at my local grocery store, so I typically stock up. Or you can use rotisserie chicken or leftover roast chicken or grilled chicken if you prefer.
  • Onion – You can substitute with scallion if you like.
  • Celery – This adds delicious crunch!
  • Greek yogurt – Adds protein and creamy texture with less fat than mayo.
  • Mayo – We reduced the mayo, but still kept some for rich flavor and creamy texture.
  • Seasonings – Here we keep the seasonings simple with seasoned salt, onion powder, garlic powder, and black pepper.

Instructions

For this easy salad, you literally just mix everything together in a bowl. It’s good to go!

plastic deli container with canned chicken salad
I like to keep plastic deli containers on hand so I can give friends leftovers to take home and I don’t have to worry about them not returning my glass containers (which surprisingly happens more than you might think, lol!). I made this batch of chicken salad along with a loaf of sourdough to deliver to a sick friend.

Storage

You can store this covered in the fridge for up to 3 days. It’s great for meal prep lunches during the week!

For the best canned chicken salad of my life, I serve this on top of a piece of toasted sourdough bread garnished with my favorite chili crisp, honey, and chives. Ohhh my.

Tips For the Best Canned Chicken Salad Recipe

  • You don’t have to stick with pantry staples; if you have fresh herbs, they work well in this recipe! Fresh parsley, chives, dill, basil, or a little bit of tarragon are some of my favorites here.
  • It isn’t necessary to rinse canned chicken, but make sure to drain it well to remove all the liquid. This will help keep your salad thick and creamy instead of watery.
  • If onion and celery aren’t your thing but you still want some veggies for crunch, try any color bell peppers instead. Also, you could add diced cucumber if you’re going to eat the salad right away; however, don’t add cucumber until right before you want to eat it because it’ll release liquid and could make the salad watery.

My husband wanted something quick at almost midnight. So I remembered I had a can of chicken. My son had asked me to buy chicken salad the other day. So I thought maybe I could make some. I didn’t have Greek yogurt or celery but I did have everything else. I mixed it up in less than 5 minutes. They both really loved it even though the teen was supposed to be sleeping. Thank you! I’ll definitely make this again and probably often. I did add a tiny sprinkle of powdered chicken broth. Thank you!

    1. Tabitha, Thank you for your lovely comment, I’m happy it was a hit! :)

Oh my , this is a great recipe! I’ve never made with canned chicken, but all I had. Simple recipe, the Greek yogurt was a delicious touch. Tasted before adding mayo, and honestly, could omit it. The yogurt blends well with the seasonings, adds a nice texture. I did add about 1-2 tbs, is very good, but next time no mayo. I am delighted to have found this recipe, definitely 5 stars! Thank you!

  4. It turned out well, thanks!

  5. Bev Murphy says:

Wonderful! I used 1/2 cup mayo and 1/4 cup greek yogurt instead, because I don’t much care for the taste of plain Greek yogurt. I didnt have any celery, so I left that out. I added about 3 Tbs of dill relish, and 2 diced hardboiled eggs. Delicious!

  6. would you say 5-6 oz per serving?

  7. 5 stars
Delicious! I left out the celery (because I didn’t have any) and the onion (because I don’t like raw onions.) I added in some Salad Topper that has pecans, cranberries and pepitas. It added a nice crunch and sweet flavor. This is such a great tasting base. I’ll have fun doctoring it up for different flavor profiles. This is my new go to lunch!

This was delicious and my grandchildren loved the flavor. This is a recipe that will go with my favorites!!!
    Thank you!!

Very good basic chicken salad. Too much yogurt/mayo though. It made it too liquidy for me. I think 1/2 cup total or a little less would have been perfect.

  10. 5 stars
Great Chicken Salad recipe!!! So simple, yet so very delicious! Just the way it should be. Only thing is I did not have any celery, so I diced up a bell pepper for a little crunch. It also added to the flavor a bit, I think. Well thank you for sharing this amazing recipe! (:

I was looking for a chicken salad meal prep idea. I was nervous about the canned chicken, for no reason. I used regular salt and a bit more pepper than the recipe called for. I also added 1/4 cup of dried sweetened cranberries for a little sweet flavor. It was delicious! Can’t wait to see how it is tomorrow when the flavors meld. Thanks for a great and simple recipe!

  12. 4 stars
This is how I make it too. Try in cooled pasta shells or croissants as so good and a nice cool meal for my husband who works outside! In the 90’s today with humid feels like 105!!! Yikes!

    1. Cooled pasta shells, what a great idea! I will definitely try that out. Thank you!

Basic easy and really good!! 👍😊

  14. Karen Hintz says:

I mixed this up today for my lunch this afternoon. It is so tasty, I can’t wait to try it after it’s had a chance to blend. It’s the perfect amount for 1 or 2 people, which I really appreciate!
The only substitution I made was sour cream for the Greek yogurt. I figured if it can be subbed for baked potatoes, it would work here, and it does.
    Thanks for a great recipe.

Did you make the pita? It looks yummy and fresh and light and lovely. I enjoyed your entire portfolio – all 4 sections. The travel one was different that the rest – bigger – more architectural (of course) The other three are incredibly detailed and artistic (as is the architectural one – just in a different “voice” somehow). Loved them all… especially the “around” pics.
    Gorgeous work. Good for you!
    :)
    Valerie

    1. Valerie, No, I didn’t make the pita, lol! Luckily I have a fantastic grocery store (Wegmans) just about in my back yard that makes these wonderful pitas. ;) Glad you enjoyed my photos!

  41. Chicken salad does have that grand “ladies who lunch” feel about it, doesn’t it? Even if it’s just a scoop on a pile of lettuce, there’s something inherently elegant about it. That’s why nobody ever tires of it or turns it down.

  42. Congratulations Faith! You are so talented, I can’t wait to see where this next phase takes you. and I can NOT wait for your cookbook!!!

  43. Emily @LivingLongfellow says:

Thanks for the quirky easy recipe. That is so smart to use Greek yogurt over mayo. Much healthier I’d imagine. I have that bowl too in a different color and love it :)

  44. I love the mix of chicken chunks with the freshness flavor of celery stalks…Instead of canned chicken breast, I’ll be using the leftover from my roasted chicken last night. Gonna whip this now. Thanks!

I can’t wait till your cookbook comes out!

  47. That’s the same trick I use in my tuna salad, substituting the mayo with greek yougurt. Never tried it in chicken salad… I’ll do it when I get home!
