What I Ate Wednesday #2

Breakfast, Part 1 (pre-workout):  Cottage cheese (I really wasn’t kidding when I said I eat it every day ;) )

This is my second time participating (here is my first) in Jenn’s What I Ate Wednesday and this month is all about loving your veggies…fun, right?  I knew right away that I wanted to participate.  If you’re a food voyeur (I know I am), dig right in!

Breakfast, Part 2 (post-workout):  The same 4-Grain Hot Cereal Mix I had last time, this time with more cinnamon added and topped with peanut butter & jelly

 Lunch:  Leftover Cream of Onion Soup with multigrain crackers & salad

Dessert:  Disks of dark chocolate with gold, frankincense, & myrrh (from my sweet friend Lorraine of Not Quite Nigella – thanks, gorgeous!)

Mid-Afternoon Snack:  A one-egg omelet stuffed with as many veggies as I could fit!

Dinner:  Mujaddara Burghul (lentil and bulgur pilaf with caramelized onion), topped with a dollop of yogurt and a sprinkle of cumin

Evening Snack:  Orange & cashews 

(Unpictured:  Multi-vitamin & water!)
