Cream of Caramelized Onion and Cheese Chowder with Homemade Croutons

March 19, 2014 by Faith 9 Comments

Being a food blogger means that I rarely get to make the same dish twice, even if it’s a dish that I really love. (Because a dish made and not photographed for the blog is a wasted dish. Sigh. That is, in fact, the twisted reality of a food blogger, lol.) But those rare “wasted” meals when I get to sneak in a favorite recipe a second – or third – time are pure bliss....

Rosemary-Onion Quick Bread

November 11, 2013 by Faith 15 Comments

Except for the rosemary leaves on top, this bread might look sweet; in addition to the herbs being a clue, the fact that it’s savory is also given away by smelling it. It’s softly scented of onion and savory herbs. Flavor and taste-wise, I’d call it say it’s reminiscent of a savory pound cake…but in a good way. (And of course this is much lighter than a classic pound cake; there is no pound of butter, sugar, or even eggs in here!) The best thing for smearing across the top? Kerrygold Irish butter, of course. (Has anyone else noticed that Kerrygold butter almost eats like […]...

Balsamic-Roasted Broccoli

October 23, 2013 by Faith 9 Comments

I’m always surprised when someone tells me they don’t like broccoli…it’s one of my favorite green veggies! Not to mention, broccoli cooks up super quick, is fabulous in risotto, and goes so well with cheese (or vegan “cheese” sauce!). Plus the florets look like little trees. What’s not to love? When I ask why they don’t like it, the most common response I get is I guess I’m just sick of it…I need new ideas! Well, there’s no way I can hear that and not come to the rescue....

Onion Bhajis & Tamarind Chutney

January 18, 2012 by Faith 28 Comments

Bhajis (or pakoras, depending on where in India you are or who you’re talking to) in general, and onion bhajis in particular, are one of my favorite appetizers.  A friend taught me how to make them a few years ago and I’ve been making them ever since; I would have shared sooner, except that I thought I already had!  I just recently realized that I didn’t have them on my site so now I’m righting this horrible wrong.  ;)...

Roasted Butternut Squash with Apple, Onion, and Thyme

November 20, 2011 by Faith 17 Comments

I can’t imagine Thanksgiving dinner without some kind of squash dish.  Pureed is usually my mom’s favorite way to go (she’s very much a traditionalist when it comes to holiday meals, and that’s how her mom always prepared it), but roasted is my preference since I love how roasting brings out the vegetable’s natural sweetness.  For this dish I use one of my favorite kinds of squash – butternut! – and pair it with apple, onion, and thyme....

Colcannon Recipe (Irish Mashed Potatoes with Cabbage)

October 31, 2011 by Faith 34 Comments

Irish Colcannon in Bowl on Wooden Table

This hearty Colcannon recipe for Irish Mashed Potatoes with Cabbage combines rich, buttery mashed potatoes and cabbage sautéed with onion for a side dish that’s satisfying, nutritious, and delicious. Halloween isn’t my favorite holiday. I kind-of see it as a non-holiday holiday that must be endured before the real holiday season can be ushered in (and for this I apologize to my darling Halloween-loving readers!)....

Savory Caramelized Onion, Feta, & Herb Muffins

February 25, 2011 by Faith 49 Comments

These muffins were revolutionary for me.  Until I made them, I had never had a savory muffin before (yes, you read that right…never!  Well, except cornbread, if that counts ;) ).  These muffins were unique to me because they showed that good muffins don’t need a boatload of sugar to be delicious (and so incredibly moist!).  I’m even thinking of remaking a few of my favorite sweet muffins (like blueberry, apple cinnamon, banana walnut, and lemon poppy) with this basic recipe (obviously omitting the savory additions), because these muffins are so tasty I really don’t think the sugar will be missed....

Baked Mushroom & Onion Dip

November 12, 2009 by Faith 22 Comments

This time of year I’m always looking for new and exciting appetizers to make (of course, I’m always looking for new and exciting holiday cookie recipes this time of year too!).  That’s because on Christmas Eve my family has a feast of hors d’oeuvres and appetizers.  In addition to a few favorite staples that always grace the table, (such as a spinach-artichoke dip that’s almost fondue-like and sausage-stuffed mushrooms) every year there are also new additions to our spread.    Recently, the nice people at Stonyfield Farms contacted me to let me know about a sweepstakes they’re hosting.  Since one of the ways to enter […]...
