Easy Pimento Cheese Dip Recipe

December 14, 2020 by Faith 1 Comment

This Easy Pimento Cheese Dip Recipe features two types of cheddar in a creamy base, whips up in just 15 minutes, and is a crowd-pleasing appetizer! It’s naturally low carb and keto friendly with just 2g net carbs per 1/4-cup serving. Serve it with crackers or chips, or keep it low carb with veggies like green bell pepper, celery, and broccoli for dipping.

The first time I ever had Pimento Cheese was at Publix when I first moved to Florida for law school years ago.

It was a somewhat gloopy-looking combination of a couple different colors of shredded cheese mixed in with a white-ish sauce, studded with bright red flecks of pepper.

Even though Pimento Cheese isn’t the prettiest thing, I was hooked after just one bite!…

Eggnog Pudding

December 9, 2020 by Faith 32 Comments

Spiced with freshly-grated nutmeg and laced with vanilla and cinnamon, this Eggnog Pudding is creamy and full of festive flavor! It’s surprisingly healthy too. Protein powder bumps up the protein content, and there’s no added sugar! The strangest thing happened the other day… My day was going along uneventfully until I suddenly found myself ravenous; it was between meal times, so a little snack was in order. I went for one of my favorites, carrots + hummus. Normal enough, right?...

July 13, 2020 by Faith 10 Comments

This Classic Blueberry Muffins Recipe whips up in 30 minutes and yields soft, tender muffins that are studded with sweet blueberries and faintly scented with lemon for a crowd-pleasing breakfast or snack. It’s funny the things we miss when we’re away from home. When Mike and I were in Kuwait, I was surprised by which sights and smells triggered a memory....

Caponata Recipe (Sicilian Eggplant Relish)

July 10, 2020 by Faith 2 Comments

Caponata is a delicious balanced sweet and sour Sicilian Eggplant Relish recipe that’s perfect food for any summer gathering. There are so many gatherings that happen in the summer. For starters, Independence Day is right around the corner! And the next two months will be full of block parties, pool parties, BBQs, picnics, and camping trips before Labor Day rolls around. There’s almost always something going on; a cause to celebrate or a reason to get together. Which means most of us are always in need of fresh new summer recipe ideas!...

Red White and Blue Popsicles (Aka Firecracker Popsicles or Bomb Pops)

June 9, 2020 by Faith 37 Comments

These Red White and Blue Popsicles are made with strawberries, blueberries, and coconut milk for the healthy version of Firecracker Popsicles or Bomb Pops! They’re patriotic, festive, and fun for Independence Day, Memorial Day, or all summer long. Mid-June when strawberries are in peak season here, I found the most perfect looking local strawberries. I bought a quart that day and went back the next day for a flat!...

Oatmeal Muffins Recipe

May 4, 2020 by Faith 27 Comments

This Oatmeal Muffins Recipe combines heart-healthy ingredients like oats and olive oil into muffins that are just sweet enough, aromatic with vanilla, and have a tender crumb. I make a ridiculous amount of muffins. Muffins are the perfect thing to whip up when you want to use up a little bit of coconut milk. Or the last 1/4 cup of a few different kinds of nuts or dried fruit. Or if you have an apple or banana that is past its prime, and isn’t good for much else except baking....

Best Banana Bread

Classic Banana Bread Recipe on Bread Board

Moist and fluffy-textured and scented with banana, vanilla, and a touch of cinnamon, this really is the Best Banana Bread Recipe! I love this recipe so much I’ve made it four times in the past month. Four times. And I’m not usually one for banana bread.  (Zucchini bread holds the number one spot in my heart when it comes to quick bread.)...

The Best Fudgy Low-Carb Keto Brownies Front View Close Up Showing Texture

The Best Keto Brownies Recipe is the perfect low carb answer to a craving for fudgy chocolate brownies; they’re decadent and rich and completely keto! For whatever reason, certain occasions just necessitate chocolate. Without getting into the whithertos and whyfors, let’s just say Valentine’s Day is one such instance. No matter what manner in which you choose to get your fill, you can’t go wrong with anything chocolate on V-Day....

Roasted Red Pepper Hummus Recipe with Easy Homemade Pita Chips

January 29, 2020 by Faith 15 Comments

Close Up of Roasted Red Pepper Hummus in Metal Bowl

Save money and learn how to make this flavorful Roasted Red Pepper Hummus Recipe at home in less than 10 minutes! You’ll never want store-bought hummus again! My hubby, Mike, who grew up in the Middle East, doesn’t go for any kind of “flavored” hummus. No crazy additions of things like pumpkin. (At the mention of that, he gave me a shocked/horrified look and muttered, Do people really do that?; my reply, Why yes, yes they do.). And no sundried tomato, pesto, or even roasted garlic (because of course garlic should be raw in hummus!)....
